Paul started as a young apprentice chef in Perth, Western Australia, then travelled extensively though south east Asia and spent a couple years working as chef in London and Europe. After spending the last 12 years running his own venues and a successful boutique events catering company Paul decided to sell up his business. On the hunt for a lifestyle change, Paul was introduced to Coral Expeditions though a fellow chef, and with a love for travelling, cooking and meeting new people Coral Expeditions was the perfect new journey for his career.
As Lead chef Paul lead the galley team to ensure they produce consistent high quality food, ensuring all dietary and cultural requirements are met for each and every guest.

In his spare time you’ll find Paul enjoy quality time with his two sons in Sydney, or spending time in his home port, Fremantle. Paul enjoys getting out on his power boat on a sunny day, or taking his motorcycle for a spin. Paul often socialising in Fremantle with local mates over a coffee or a beer in his favourite locations.
